Lemon Icebox Cake


 This is my new favorite dessert. Seriously.

Ridiculously easy? Check.
Deliciously yummy? Check.
Satisfies all sorts of cravings? Check.
Tastes like a lemon ice cream sandwich? Check.

Layer graham crackers with Light Lemon Curd and freeze 12 hours. Yeah. It's that simple.

  1. I don't really have a recipe, except for the lemon curd. See my post: http://alipyper.com/2011/11/10/lemon-curd-recipe/. After I've made the lemon curd, I carefully fold a cup of lemon curd with a cup of prepared heavy whipping cream that I've already whipped with a bit of sugar. Then, I start layering graham crackers with the lemon curd/whipped cream filing and put the layers in a pyrex (or other freezer dish or pan). When the filling is completely frozen, it's ready! You can make it as pretty as you'd like, but I don't even bother.
