Lemon Icebox Cake

This is my new favorite dessert. Seriously.

Ridiculously easy? Check.
Deliciously yummy? Check.
Satisfies all sorts of cravings? Check.
Tastes like a lemon ice cream sandwich? Check.

Layer graham crackers with Light Lemon Curd and freeze 12 hours. Yeah. It's that simple.

  1. I don't really have a recipe, except for the lemon curd. See my post: After I've made the lemon curd, I carefully fold a cup of lemon curd with a cup of prepared heavy whipping cream that I've already whipped with a bit of sugar. Then, I start layering graham crackers with the lemon curd/whipped cream filing and put the layers in a pyrex (or other freezer dish or pan). When the filling is completely frozen, it's ready! You can make it as pretty as you'd like, but I don't even bother. If you'd like another really yummy lemon dessert, you can see this post:

Thank you so much for taking the time to comment. I treasure your thoughts about my posts and read each and every one!
